Crisp Chevallier® Heritage Malt is a traditional English base malt made from the historic Chevallier barley variety, which was widely used in British brewing from the 1800s into the early 1900s. It has a colour of approximately 2.5-4.6 Lovibond and is known for its deep malt character, marmalade-like sweetness, and subtle fresh bread notes. Compared to many modern base malts, Chevallier has a fuller and more pronounced malt flavour, making it a good choice when you want the grain character to play a major role in the finished beer.

Chevallier can be used as the primary base malt and Crisp recommends usage rates of approximately 80-100% of the grain bill. Its rich malt character works especially well in traditional British styles, but it can also provide enough malt depth to stand up to heavily hopped modern beers.

Given its rich malt profile, Crisp Chevallier® Heritage Malt is well suited to a variety of beer styles:

1. Golden Ales: Adds a rich malt backbone with light bread and marmalade notes while maintaining a relatively pale colour.

2. English Pale Ales and Bitters: Provides a fuller traditional malt character that works well with classic English hops.

3. IPAs and Double IPAs: The stronger malt flavour helps balance higher hop bitterness and heavier hop additions.

4. Barleywines and Strong Ales: Adds deep malt flavour, sweetness, and complexity that works well in higher-gravity beers.

5. Historical and Victorian-Style Ales: A natural choice for recreating traditional British beers that would historically have been brewed with Chevallier barley.
